Tsukune (Japanese chicken meatballs)

500g skinless chicken thighs, trimmed, chopped 1 small onion, grated 1 garlic clove, grated 1 tsp grated ginger 1 tsp lemon zest 1 tbs barbecue sauce 1 tsp caster sugar 1 eggwhite 1 tbs white sesame seeds 1 tsp black sesame seeds (see note) (optional) 1 sheet nori seaweed (see note), cut into thin strips Sauce 2 tbs tomato sauce (ketchup) 2 tbs barbecue sauce or oyster sauce 2 tsp Worcestershire sauce

Preheat the oven to 180°C and line a tray with baking paper.

Combine sauce ingredients in a bowl.

Whiz chicken, onion, garlic, ginger, zest, barbecue sauce, sugar and 1/2 teaspoon salt in a food processor for 1 minute or until completely smooth and sticky. Add the eggwhite and whiz to combine. Using damp hands, roll a heaped teaspoon of mixture into a ball and place on the lined tray. Repeat with remaining mixture to make 16 balls. Bake for 10 minutes or until almost cooked through.

Remove the tray from the oven. Brush half the sauce over the meatballs, sprinkle the tops with the sesame seeds, then return to the oven for a further 10 minutes or until golden and cooked through.

To serve, place 16 small dollops of the remaining sauce on a serving plate, then place the meatballs next to the sauce. Scatter with nori strips and serve.

These were yummy, replaced the lemon zest with some wasabi and it was beautiful, without being spicy at all, also put a dollop of kewpie Japanese mayo with the sauce on the plate, the flavors worked really well together. Better as a dinner dish than a canapé I think as they tend to fall apart slightly.

My experiment with bread called as Sesame Dinner Rolls. I have used white+black sesame seeds for calcium and proteins. Sesame Dinner Rolls are easy to make at the same time healthy and nutritious. I have replaced butter with olive oil. Also added wheat flour for fiber content. Very important is to use yeast of good quality. Otherwise your bread won’t rise. You could add 1 tbsp of raagi flour, maize flour, bajra flour and jowari flour each in any bread you make. Once you add all these your bread will be rich in fiber and help in curbing cholesterol. So do include fiber in your diet for a healthy life.

I ngredients:

F or Bread:

1.5 cups flour (I have used 1 cup refined and 1/2 cup wheat flour) 3 tbsp olive oil 1 t/s salt 4 tbsp warm water 1 tbsp brown sugar 1 tbsp fresh yeast Or 1 t/s dried yeast 1 tbsp white sesame+black sesame Preheat the oven at 220°C for about 10 mins before baking bread. Also grease generously the baking pan. Firstly take yeast and immerse in lukewarm water. Mix sugar and stir with a spoon. Keep covered in a humid place. After 5 to 7 mins it should have froth now add salt and stir again. Take a big vessel combine flour, fresh yeast with water. Use your fingers and all the stamina to form a dough. Knead until 15 to 20 mins. Add little water Or oil if required. Lastly add oil, sesame seedsand knead again the dough would be slightly sticky that’s fine. Don’t be tempted to add more flour. Shape the dough into 6 to 7 oval shaped balls. It’s okay if they are not perfect in shape.
